Their mission? To dish up traditional flavours in new and modern ways that would excite the palates of a contemporary audience.

Paying homage to an era long gone, Lyn names the brand after an old-time bar in Katong, where Sinpopo Brand was first established.

Lyn's vision for Sinpopo Brand was never about fusion foods, but a commitment to stay true to heritage. This was their way of elevating the complexity and sophistication of old-school methods, despite their laborious process, over modern short-cuts. But just as one man cannot move a mountain, behind every item on the Sinpopo Brand menu lies a team of passionate 'foodies'-as Lyn would term themselves-experimenting on recipes they love.

Samantha, Brand Manager and more affectionately known as Sam, was one such person privileged enough to find herself in this family of enthusiasts.

From friends to family, the two share a close relationship after many years of working together.

Having met when Sam was only 21 years old, Lyn calls her 'the driving force of Sinpopo'. Armed with a shared passion to constantly bring new things to the table, the duo is a testament of kinship formed through trust and trial, just like the generations before us that The Clan Hotel Singapore continues to honour.

Empowered by camaraderie and spurred by the belief that heritage must be preserved and traditions celebrated, it's no wonder Lyn resonates with the story of The Clan Hotel.
